Chicken Patty with Black Bean Flour











2             cups shredded cooked organic or free range chicken
1/3-1/2   cup black bean flour 
1/2          cup raw grated Parmigiano Reggiano 

sea salt and pepper to taste
1              teaspoon turmeric

1/4          cup yogurt
2             organic free range eggs
1/2          cup finely chopped scallion
2              cloves of garlic finely chopped
1              tablespoon finely chopped fresh herbs of your choice (sage, 
                rosemary, thyme,  oregano, .....)
1/3          cup sesame seeds
Coconut or grape seed oil as needed









  • Put chicken and bean flour along with Parmigiano Reggiano, sea salt, pepper and  turmeric in a food processor bowl and pulse a few times.

  • Mix in the rest of the ingredients except for the oils , one at a time for better consistency, and pulse a few times. 

  • Heat the oil in a frying pan (stainless steel or non-stick, non-Teflon ) and shape the batter into patties in the palm of your hands. Carefully fry both sides. If the batter sticks into your hand, just wet the palm of your hand before you start shaping the patties.
